*One of my favorite holiday traditions is baking gingerbread boys! I give them to friends, neighbors, teachers, and cousins. Everyone loves them!
- 4 1/2 cups all-purpose flour
- 1 cup sugar
- 1 cup shortening
- 1 cups molasses
- 2 large eggs
- 1 T. ground cinnamon
- 2 t. ground ginger
- 2 t. ground cloves
- 2 t. baking powder
- 1 t. ground nutmeg
- 1 t. baking soda
- 1 t. salt
- 1/2 cup raisins
In the bowl of an electric mixer, add the ingredients. Mix on a low to medium speed until well blended. Divide the dough in half. Shape each dough into a disk and wrap in wax paper. Chill for several hours or overnight.
Preheat the oven to 350¬ļ.
On a lightly floured Silpat, place 1/2 of one of the disk, flatten slightly and roll out to a 1/4" thickness.
Cut out the men with your favorite gingerbread man cookie cutter. Remove the extra dough with a small offset spatula. Slide the Spilt onto a cookie sheet. At this point, If you would like to decorate the cookies with raisins, Gently place them on the cookies and press slightly.
Bake for 10 to 13 minutes. Cookies will not brown very much. Remove from the oven and place on a wire rack to cool. After the cookies cool slightly, about 5 minutes, remove the cookies from the baking sheet and place on another wire rack to cool completely.
While the cookies are cooling, make the Royal icing.
When the cookies are cooled completely, decorate the cookies with Royal Icing, and candies.
